Strawberry Lime & Rose Mock Tail


Here in the Portland, Oregon area the roses are starting to bloom, so it is Rose Festival Season! I just love this time of year when my rose bushes are at their prime and they have the most lovely, fragrant blooms. Since I grow my roses organically and don't use any chemicals on them, I can use them in drinks and dishes! What a win! 

I hope that you enjoy this fun and quick drink recipe that you can make to celebrate the roses this season! You could also add some rose water to amp-up the rose flavor if you desire. 

Rose, Strawberry Lime & Rose Mock Tail: 

1/2 cup chopped fresh strawberries

1 key lime, quartered

1/4 cup maple syrup with infused rose petals (you'll use 1-3 tablespoons of this for 1 drink, then save the rest) 

1/4 cup water

1/4 cup rose petals

4-5 rose petals (for muddling in drink) 

crushed ice

sparkling water


1. Put strawberries & lime pieces & 4-5 torn fresh rose petals into a tall glass. 

2. Make syrup: bring to a simmer the water and maple syrup. Add the 1/4 cup rose petals. Infuse the syrup for 10 minutes while it cools. 

3. Add 1-3 tablespoons of the infused syrup to the glass. Muddle with a wooden spoon or muddle. Then, add crushed ice and sparkling water to taste. Taste your drink for sweetness and add more of the syrup to taste. 

This drink is yummy and refreshing. It won't taste a lot like rose petals but it has a unqiue flavor.

10 minute meals: Mediterranean Fried Rice

I love requests! A great friend of mine in my "Recipes for a Cheery Life" Facebook Group for meal planning and recipes asked for some 10 minute meal recipes. I loved that challenge so I decided to dedicate today's morning recipe session that I always do on Mondays to creating some of these for her. 

I was able to come up with 2 quick meals and 1 quick snack! What a fun challenge. I did this by taking out lots of items from the pantry and the fridge and thinking quickly of ways to combine them into healthy meals. 

I love the taste of hummus and lemon juice, so I combined those flavors into this vegan main dish that is great for lunch or dinner. It is a fast, 10 minute dish that you can whip up on a weeknight or one that you can make the night before to pack up and take with you to work. 

Enjoy the fresh flavors of this meal that you can make yourself in a matter of minutes! Hooray!


10 Minute Mediterranean Fried Rice: 

Makes: 2 large Servings

1 cup baby spinach leaves (place 1/2 cup on each plate) 

olive oil for sauteing

1/2 of a small shallot, diced finely

1 can chickpeas, drained and dried by rolling inside a clean kitchen towel

1 cup cooked brown rice (cold)

1/4 cup parsley, chopped

1 teaspoon lemon juice




1. Drain and dry chickpeas by rolling them inside a clean kitchen towel. 

2. Heat olive oil in a skillet over medium high heat. 

3. Cook shallots for 2 to 3 minutes or until softened.

4. Add in chickpeas and rice and cook for 2-3 minutes. 

5. Add in the lemon juice, parsely and season to taste with salt, pepper and paprika. 

6. Take off of the heat and divide between 2 plates on top of the spinach.

Fresh Raspberry Cherry Lime Mock Tails

Yay! It's officially summer! I'm so excited about the bounty of local produce available including fresh, sweet cherries and raspberries. I am finally able to pick a whole bowl full of raspberries per day from the raspberry plants in our backyard. It is awesome! 

A wonderful thing happened when I happened to have a bag full of fresh cherries and fresh raspberries from the garden- I was able to create this drink! I love the combination of sweet fruit and tart, refreshing lime juice. 

This drink is healthy enough to treat yourself to at breakfast yet fancy enough to serve at a fun party or event. I invite you to get our your cocktail shaker and muddle up some fruit- get out there and enjoy summer and this amazing drink! 


Fresh Raspberry Cherry Lime Mock Tails: 

1/4 cup fresh raspberries

1/4 cup fresh cherries- pitted and cut in half

Juice of one fresh lime

1/2 cup green tea, brewed and cooled 

2 teaspoons pure maple syrup (1 teaspoon per glass) 

1-2 cups sparkling water

1/2 cup ice

1. Place the fresh raspberries and cherries in a glass measuring cup or a bowl. Mash or muddle them with a wooden muddler or spoon. 

2. Place the crushed berries and cherries in a cocktail shaker along with the fresh lime juice and green tea and ice. Shake to combine together. 

3. Divide the mixture between two martini glasses. Then, pour sparkling water over the berry-cherry mixture. Then, mix in 1 teaspoon pure maple syrup into each glass. Stir to combine. Add more maple syrup to taste.
