I met a lovely friend in my son's preschool class many years ago named Kat. She is a fitness and nutrition expert and I went through her 5 week eat-clean program and learned a lot about healthy eating from her.
I love that she loved to bake too and she gave me this great recipe for fall-themed protein cookies! My son wanted to make some and he really wanted peanuts and peanut butter, so we changed the recipe a bit and added those. You can tinker around with the types of dried fruit, nuts or nut butter that you add to this recipe and create a cookie that you will love.
The best part about these cookies is that they have quite a bit of protein in them and won't give you the crazy sugar rush of a regular cookie. Thank you Kat for this amazing recipe! Kat's Peanut Pumpkin Date Protein Cookies
Makes 12 cookies: Great for breakfast on the go or a quick snack
1/4 cup pumpkin puree
1/2 cup peanut butter
1/2 cup honey
1 teaspoon vanilla
1 cup almond meal
1 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 cup chopped dried dates
1/4 cup chocolate chips
1/2 cup chopped peanuts
1 tablespoon ground flax
1. Heat oven to 350F.
2. Mix together wet ingredients to combine in a medium bowl.
3. Add dry ingredients to the wet ingredients in the bowl and mix.
4. Scoop out about 12 portions of the dough onto parchment lined cookie sheets. Flatten out each dough scoop.
5. Bake for 8-10 minutes or so or until golden brown.
