This past weekend we enjoyed a quick one-night camping trip with a group of friends and their children. It was at a lovely site near an amazing creek, lots of beautiful trees and wildlife. For this trip I decided to really put our pie iron to the test. I have had this pie iron for many years, yet I only recall using it once in our fireplace at home. Now that we have tried it I can tell you it is something we must pack for every camping trip from now on!
The pie iron consists of two cast iron squares on a hinge with long metal handles and wooden gripping handles at the end. For dinner, we were originally going to make English muffin pizzas on a pizza stone over the camp fire, however we later thought we should make a pizza sandwich on the pie iron instead. This turned out to be a very yummy experiment indeed. We learned that it is best to put the iron directly into the coals and to check it often as it cooks the sandwich quite quickly.
We liked our sandwiches so much that we decided to make breakfast sandwiches on the pie iron the next morning with more English muffins, cheese, Canadian bacon and some scrambled eggs. They were fabulous!
Another important tip: Make sure that you either use English muffins for your bread as they fit into the pie iron well, or cut the edges off of your bread so that you will have more of a square shape to fit into the pie iron.
Before closing this post I want to include a recipe for homemade pizza sauce for the pie iron pizza sandwiches. I hope you enjoy your pie iron creations at your next camp out!
Homemade Pizza Sauce:
One 8 ounce can tomato sauce
2-3 cloves minced garlic
1 teaspoon dried basil
salt and pepper to taste
In a small saucepan heat up the tomato sauce, garlic and basil until simmering over medium heat. Turn the heat down to low and let simmer for 5-7 minutes. Add salt and pepper to taste.
